If you are looking for an easy recipe with Italian taste, low fat and really healthy you really have to try this one. The balsamic glaze is perfect with the salmon.
4 salmon fillets (skin on)
2 teaspoons olive oil
1/4 cup water
1/4 cup balsamic vinegar
1 1/2 tablespoons fresh lemon juice
1 ½ tablespoons brown sugar
Salt and pepper to taste.
In a bowl, combine the water, balsamic vinegar, lemon juice, and brown sugar. Stir until well combined.
Pat dry the salmon and sprinkle with salt and pepper to taste.
In a skillet, heat the olive oil over high heat. .Add the salmon skin side up, and sear for about 4 minutes.
Turn the fish over and sear for 4 minutes more until just cooked through.
Transfer the salmon to the plates and add the vinegar mixture to the skillet. Bring to a simmer and stir for about 2 minutes until thickened and reduced to about 1/3 cup.
Spoon the glaze over the salmon and serve.
